Hi, if you don't want to see the default apps on the Home screen, you can create a app folder to put all the unwanted apps in it.
If you have encountered issues in setting wallpapers, you can set your wallpapers in 2 ways: 1) go to 'Settings' - 'Personalization' - 'Wallpaper' to change wallpapers 2) select any picture you like in Gallery app, and tap 'More' to see the options to set wallpapers.

No way to hide default app but you can set it in protection mode.
