No it will not brick your phone. If you want to return to global just download and install the rom with "clear data" option checked. That's it. As for pokemon I have no I idea. Also, Google apps will work with or without root. It's just that when they are system apps tend to work better. Proceed as you see fit.

What if I'll want to go back to global version? Can I just download FlymeOS 7.1.1.0G and instal it on FlymeOS 7.3? Won't this "downgrade" brick my device? I don't need Google apps as system apps. And I don't want to root my phone because of Pokémon GO. But I'm not sure if they still doesn't allow to play Pokémon GO on rooted phones. ????

Furthermore, installing flyme versions is super easy. You just download the update.zip from meizu and then open it. Don't forget to always check the "wipe" option when updating to another version of flyme.
