you can give root rights to es file explorer and buck up any  apk you want

you can manualy replace the apk file under system > apps > camera with any root explorer
uninstalling the camera app may force a boot loop and have to reflash rom
in my case i  replacing the apk foce closed the app and after uninstaled the camera app i could not reinstall the original apk
after all i had a nice boot loop (but as i sayd i used the chinese camera apk from another link)
