yes you can I'm using flyme6 Chinese stable it's way better than Global and if you don't like it you can switch back to Flyme Global again... and flashing CN version won't harm to your device

Yes you can install Chinese 'A' firmware. BTW why do you want to install Chinese firmware. Default apps in Chinese firmware will be mostly in Chinese.
